Springing into Spring with Sweets at Opals
Easter is right around the corner—April 9—and Pastry Chef Eric Smith said he and his colleagues have been working diligently to create some special treats.
At Opals, three special dessert options are sure to inspire guests to hop for joy.
The first, Easter Bunny Oreo Cupcakes, are chocolate cupcakes with Oreo cookies folded into the batter and an Easter Bunny decoration atop pastel-colored icing on top. The second, what we’re calling a Cupcake Flower Bouquet, comprises two-dozen cupcakes arranged in a box in the shape of a bouquet of roses.
The third dessert is a five-layer pastel confetti cake. Eric described this as a “naked” cake, meaning it boasts icing only on the top and enables guests to see the layers when looking at the cake in the Opals case.
“It’s fun taking traditional desserts and making them special for the holiday,” said Eric. “Decorating things for Easter is one of my favorite times of year.”
Eric noted other restaurants and venues across Turning Stone Resort Casino also will be offering special Easter desserts. At TS Steakhouse, for instance, the dessert menu will feature a giant slice of carrot cake—a subtle nod to Easter by celebrating a bunny’s favorite vegetable treat.
For Eric himself, spring is a nostalgic time of year. He said his favorite Easter dessert as a child growing up outside Elmira was classic coconut cake made with yellow cake, buttercream frosting, and shaved coconut on the outside. Eric noted that some years he’d get creative and craft rabbit ears out of cake rounds and affix them to the top of the coconut cake, making the cake look like the Easter Bunny.
“This time of year brings up memories for everyone,” he said. “I’m glad I can make desserts to help create new memories for people as well.”
