The focus of the menu at the AAA Four-Diamond-rated Wildflowers, has always been on fresh, seasonal ingredients. And this season, it doesn't get any fresher than the five Oneida's beef dinner entrée. Executive Sous Chef Francesc Marí Paimes said, "each season the menu at Wildflowers includes a dish with an American Indian influence. This is the first time Oneida beef has been on the menu." The Nation's Agriculture Department operates one of the largest farms in Madison County and is home to the second largest Black Angus herd in the Northeast with more than 1,200 head. "The five Oneida's beef tasting features different textures and preparations of meat," Marí explained, "I'm very happy with this menu. We are offering guests very well-balanced, seasonal flavors."

Favorites like the Lobster Bisque and the Steak Diane, which is prepared tableside, remain on the menu. Pompano (a firm, mild, white fish), Kampachi (sushi-grade rich, succulent fish), Veal and Filet Mignon also appear as entrées.

Wildflowers is open daily for from 6am to 11am for breakfast, 11am to 2pm for lunch, and from 5pm to 10pm Sunday through Thursday, and 5pm to 11pm Friday and Saturday for dinner. The restaurant serves Sunday brunch from 11am to 2pm and serves as the room service kitchen for guests at The Lodge.
